The only advice I can give is keep doing the quest, except you want to use a gunlance there arent any special tactics to use.

Try to hit the face and neck/stomach and learn to avoid his attack pattern.
Some weapons are better for hitting his face, others will not be able to hit it enough...

I'd recommend getting armor with Guts, if you're still having troubles. If you're going to use a gunlance I recommend making the Plum D Hermitaur set, or if you like using Great Swords/Long swords grab Lavasioth and gem it up with Fencing. If you prefer to range Fatalis I'd recommend Plum D for bow gunning and gem it so there's no negative reload and add Gunnery King or Lavasioth for the bow with Akantor Bow and Capacity up. All of these sets are relatively easy to get and Guts makes Fatalis much easier to manage until you get used to his routines without the frustration of "when will it die?"
Hopefully that helps, and don't forget to have fun with it. (Always satisfying to Clust S or pierce bow a Fatalis out of the sky).
